Healthy pesto

Who doesn’t love a pesto pasta?! It’s one of my favs to go to when I just can’t be bothered to cook and I need food…fast! This pesto recipe is so divine and simple to make you can’t go wrong! You can use whatever bits you have in the cupboard, I’ve used almonds before and it was just as delicious. The best thing about it is that with the nutritional yeast in it, you don’t miss the cheese 👌🏼 
If you don’t have nutritional yeast you can get it in most organic or health food shops. It has a cheesy taste to it so whenever I make a dish that I used to smother in cheese I use this instead! 

Ingredients: 

  • 2 cups fresh basil leaves
  • Handful of spinach leaves
  • 2 cloves of garlic
  • Pinch of salt
  • 1/2 cup nutritional yeast 
  • 2 table spoons olive oil
  • 1/2 cup of pine nuts or walnuts 
  • 1 table spoon lemon juice

Blend all the ingredients together and then add to cooked pasta. It tastes great with fresh tomatoes and some extra spinach ✌🏼
